Crispy Chewy Gluten Free Chocolate Chip Cookies

A more traditional cookie, with that perfect crispy chewy texture, despite being gluten free.

Ingredients
  • 200g gluten free plain flour
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 160g coconut sugar
  • 2 tsp coconut syrup
  • 140g unsalted organic butter, softened
  • 1 large organic egg
  • 1 tsp vanilla extract
  • 200g 70% dark chocolate, roughly chopped
Instructions
  1. Preheat a fan-forced oven to 160 degrees and line a baking tray with baking paper.
  2. Add the flour, baking soda, sea salt to a large mixing bowl and set aside.
  3. In a small mixing bowl, cream the butter and coconut sugar together, then add the coconut syrup, egg and vanilla extract and whisk to combine.
  4. Add the creamed butter and sugar to the flour and mix until combined - it should be a doughy consistency. Then stir through the dark chocolate chunks.
  5. Scoop up about two scant tablespoons of the mixture and shape into a ball, then flatten a bit. They will spread, so you’ll only fit 8 onto the baking tray. Repeat in batches.
  6. Bake for about 15-18 minutes, depending on how crispy you want them. Cool on a wire rack completely before eating.
