Anyone else a big fan of really GOOD gluten free chocolate chip cookies?!

I sure am! (Let’s be honest, I love lots of treats!)

If you’re not into the commercial aspect of Valentine’s Day, then why not whip up one of these gluten free chocolate chip cookie recipes for the loved ones in your life? (Please don’t wait for Valentine’s Day though, these are ANY day cookies).

 

There are lots of recipes out there for the “perfect cookie recipe” but let’s just talk about what MY perfect cookie is shall we? And I’m just going to hope that you feel the same as me…

A good cookie:
  • Is crispy and chewy.
  • Not sickly sweet.
  • Chocolate chunks over chips.
But it also has to be:
  • Wheat/gluten free.
  • Preferably dairy free.
  • And use healthier ingredients.

 

 

Anyway … good news!

I have not one, but TWO, easy recipes for gluten free chocolate chip cookies that will satisfy your cookie cravings, but also use healthier ingredients than your regular store-bought cookie.

They are the perfect balance between tasting delicious and being a healthier option for you. No highly refined ingredients, preservatives or flavours here – just home-baked #COOKIELOVE.

First up, for the more traditional, we have the Crispy Chewy Gluten Free Chocolate Chip Cookie.

If you want to step up that health factor, then go with the Wholesome Oat Gluten Free Chocolate Chip Cookie. (Hello fibre!)

Either way, you’ll be in cookie heaven!

 

Crispy Chewy Gluten Free Chocolate Chip Cookies

A more traditional cookie, with that perfect crispy chewy texture, despite being gluten free.

Serves: 20-30 cookies
Ingredients
  • 200g gluten free plain flour
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 160g coconut sugar
  • 2 tsp coconut syrup
  • 140g unsalted organic butter, softened
  • 1 large organic egg
  • 1 tsp vanilla extract
  • 200g 70% dark chocolate, roughly chopped
Instructions
  1. Preheat a fan-forced oven to 160 degrees and line a baking tray with baking paper.
  2. Add the flour, baking soda, sea salt to a large mixing bowl and set aside.
  3. In a small mixing bowl, cream the butter and coconut sugar together, then add the coconut syrup, egg and vanilla extract and whisk to combine.
  4. Add the creamed butter and sugar to the flour and mix until combined - it should be a doughy consistency. Then stir through the dark chocolate chunks.
  5. Scoop up about two scant tablespoons of the mixture and shape into a ball, then flatten a bit. They will spread, so you’ll only fit 8 onto the baking tray. Repeat in batches.
  6. Bake for about 15-18 minutes, depending on how crispy you want them. Cool on a wire rack completely before eating.

 

Wholesome Oat Chocolate Chip Cookies

With wholesome oats, you could be excused for eating one of these for breakfast!

Serves: 20-30 cookies
Ingredients
  • 2 cups quick oats
  • 2 cups gluten free plain flour
  • 1 cup coconut sugar
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 1 cup organic coconut oil, melted
  • ¼ cup almond milk
  • 3 organic eggs
  • 1 tbsp vanilla extract
  • 200g 70% dark chocolate, roughly chopped
Instructions
  1. Preheat a fan forced oven to 170 degrees and line a baking tray with baking paper.
  2. In a large mixing bowl, add the oats, flour, coconut sugar, baking soda, salt, melted coconut oil, eggs and vanilla and beat until combined and the dough holds together. Stir through the dark chocolate chunks.
  3. Scoop up about two tablespoons of the mixture and shape into a ball, then flatten (think rustic not perfect!). You’ll fit around 8-10 onto the baking tray (they won’t spread too much), so you will need to do a few batches.
  4. Bake for about 12-14 minutes. Cool on a wire rack completely before eating.
